Gotta go with Tom Landry of the Dallas Cowboys. He was a class act through and through.

Close seconds would be Jimmy Johnson and Tony Dungy. I like Dungy because of his calmness and the fact that he never acts like a horse's ass, and Jimmy brought the Cowboys back to the top.
